He still has the moustache, but there's no mention of Husker Du. Wouldn't that attract customers?

I think that Husker Du is something that he prefers to leave in the past.

They seem keen to promote the restaurant for its food, rather than one of it's proprietor's past.

He hasn't always been so keen to forget his past.

His many previous efforts at opening restaurants were complete failures:

The Flexibler Fryer
What's Going On (Inside My Oven)
Flip Your Fig
Too Much Spice
No Reservations

And his bars didn't do much better:

Whatcha Drinkin'
Drink Turns To Blue

Well, you say that, but I'm now feeling inspired to open a punk fish 'n' chip shop, and call it the Flexible Fryer. All staff will be fat, ugly, and wear flannel shirts.

Of course polyester for the trousers. How else will you get the shiny look after ironing them?

He always reminded me (appearance-wise) of the chef guy from apocalypse now because of the moustache.but now the fact that hes actually a chef blends him even more with it.
