spinach rice is super easy...
2 cloves of garlic, a quarter spanish onion chopped.. lightly fry off in a pot with some olive oil.. add long grain rice, swirl around, then enough vege stock to cook it through. stir every so often until cooked. At the last minute stir in some chopped frozen spinach and some parmesan(veg friendly if it suits ya). easy.
Asparagus chopped up into thirds, fry with olive oil, a splash of balsamic and soy, and some seseme seeds. Until it is JUST cooked and bright green.
