They played two of these: One during the
Goo era - which you speak of - and another at the time of
Sonic Nurse. The second time was far more successful, and opened with "I Love You Golden Blue" with organ and piano.
An acoustic set would be fine, but, as someone else said, while guitars will probably be crucial, the album should encompass multiple acoustic instruments, such as Kim's trumpet, Lee's organ, and Steve's clay drum (does he still have it?). Throw in Mats Gustavsson, and you've got quite a party...
