been experimenting with waters with the coffee and teas

turns out soft water is great for sencha, brings out the bright flavors. distilled, too much acidity with a bland follow. dasani, just right. nestlé pure life is actually hard water and ruins it. my tap water, filtered, is very hard water, but i prefer that to distilled.

same thing applies to yorkshire gold tea. hard water makes is so fucking tannic. dasani gets it right.

but with coffee! coffee is different.

my dark espresso roast tastes sour as fuck with soft water. but with hard water—nice and smoky and great! (for my taste anyway)

that is great cuz i’d hate to buy bottled water for coffee.

ps roasted kukicha also tastes good with hard water. with soft water not bad either, but the woodsy scent extracted with hard water is more interesting.
