Uh, maybe they find her smart, witty, funny, and endearing (well at least as much as you can convey over a message board) and hence are attracted to her personality.
As long as a person isn't flat out fucking hideous these traits can make a an average looking person look incredibly hot, or I guess, if you're a really unshallow person, make anyone attractive.
I also think a lot of its no serious, just in good fun, because boys like it when they meet a cool chick on the internet and then fake flirt around a little.
