i go to the gym at least 5 times a week. i have a hard time making myself do anything but the arc trainer. (it's similar to the elliptical) it just burns sooooo many calories and it's such a hard work out that i can really tcb. i'd have to run for an hour and a half to do as much work as i do on that thing in 45 minutes. i also lift weights, but i really prefer weight machines to free weights since they control your movements better. i also walk a lot for work and take a lot of stairs.. which can be pretty gruesome due to the shoes i choose to wear.
as far as eating... i'm not as hardcore as i used to be about stuff. i just try to burn it off. i don't really like meat, but do occasionally eat it.
